Black Urfa Chili: Found on almost every table in southeastern Turkey, this spice is delicious on anything needing a little extra depth and a hint of heat. After being cured, the black Urfa chili is packed with salt and a little sunflower seed oil to preserve its natural texture and flavor and prevent it from drying out.
Cloud Forest Cardamom: harvested in Alta Verapaz, Guatemala and grown on one of the only single-estate cardamom farms there, this spice includes whole pods ground into a coarse powder, which have the added benefit of thickening dishes, thanks to the cardamom pod's husk (you may need to grind it further into a finer powder texture if it's not going to go through a long cooking process, like with baked goods). With notes of ginger, apricots and jungle flower, this spice can be sprinkled into sauces, stews, or braised dishes, cooked down with fruit juice for a savory/sweet sauce or juice, or added to a meat or veggie rub, especially for chicken or lamb. The name comes from Guatemala's cloud forests- ideal for growing cardamom, which thrives in temperate high-altitude environments with plenty of rainfall. The comparatively low temperatures in the mountains during the harvest season (November-January) ensure that the cardamom has very high levels of fragrant essential oils.
New Harvest Turmeric: Grown organically in southern India by Dr. Salunhke, an expert farmer specializing in sustainable agricultural techniques. It has a sweet, floral flavor without the metallic bitterness found in lower-quality turmeric, and is perfect for both sweet and savory applications, in curries and other dishes as well as in turmeric teas and lattes.
Royal Cinnamon: harvested in the mountains around the ancient Vietnamese capital city of Huế. This cinnamon exemplifies the intense sweetness and spiciness for which Vietnamese cinnamon is prized. Use it in place of Saigon or other cinnamons in pastries and baked goods, or sprinkle into rich, savory meat or tomato-based dishes.
Silk Chili: These summery and spicy Silk Chili Flakes come from Kahramanmaras, Turkey. Also known as marash pepper, the Silk Chili is botanically identical to the Aleppo pepper, which has been cultivated in Syria for centuries. Due to the ongoing violence of the Syrian civil war, true Aleppo chili is unfortunately no longer available for import. These zesty flakes have a warm, tomato-like flavor and a medium heat, similar to Espelette and Korean chilis.
